Directions:
To prepare coconut, pierce eyes in end of coconut and drain liquid. Roast coconut in shallow pan in preheated 350º F oven 20 to 30 minutes, or until shell cracks in several places. Remove from oven and pound with hammer to crack coconut open. Remove meat in fairly large chunks when possible and run potato peeler down edges to make strips. Spread half in roasting pan; sprinkle with salt and toast in 300º F oven 20 to 25 minutes, stirring occasionally.
Repeat with second batch. Cool.
