Chicken back, wing tips, necks and giblets
1 large onion
2 cloves garlic
2 ribs celery with leaves
2 carrots
10 peppercorns
5 whole cloves
2 bay leaves
Parsley stems
1 egg shell

Directions:
Directions:
In a large pot of cold water place all the ingredients. Bring to a boil, then reduce heat to a simmer. Skim off foam as it accumulates and simmer for 3 to 4 hours. Keep the pot full of water to allow for evaporation. Strain and discard bones, vegetables, etc. After the broth has been refrigerated the fat can removed as it will harden.
Note: The egg shell is an important ingredient. Old-fashioned cooks knew that an egg shell would keep the broth clear!
