Salmon fillets (as many as your family needs)
Basil pesto (found in Italian sauces)
Salt and pepper to taste

Directions:
Directions:
1. Defrost salmon fillets in refrigerator or lukewarm water. Cover salmon on non-skin side with basil pesto and salt and pepper. Use as much or as little as you want.

2. Heat olive oil in a skillet over medium heat. Place salmon skin side down in skillet. Cook about 5 minutes on skin side, then flip salmon.

3. Remove skin with a fork or by carefully pulling it off. Season skin side with basil pesto and salt pepper after removing skin. Cook for about 5 more minutes on opposite side.

4. Based on how cooked you like your salmon, this will determine the length of time you cook it. Typically salmon in a restaurant is served medium-rare.

5. Remove from heat and serve.
This dish is fantastic- I would recommend it to anyone! Jordan and I found this recipe is also fantastic when you sautee onion and orange with the salmon. Add your own flavors and fruits/veggies.
