1 lb. bay scallops
2 Tbsp. rum
2 tsp. honey
1 bag (6 oz.) baby spinach
1 tsp. chopped mint
2 Tbsp. butter

Directions:
Directions:
Heat 1 Tbsp. butter in a skillet over medium-high heat: add the scallops. Cook, turning once, until seared, about 3 minutes total. Remove scallops, leaving butter in the pan. Add the remaining 1 Tbsp. butter, rum and honey to the skillet; cook, stirring until the butter is melted, about 1 minute. Return scallops to the pan; season with salt and pepper. Cook, stirring occasionally, to warm the scallops, about 2 minutes. Stir in the spinach and mint; cook, stirring until the spinach is slightly wilted,about 1 minute. Serves 4.
