6 medium slices bacon (cooked until crispy and cooled)
4oz melting chocolate
1 cup butter (softened)
1 cup brown sugar
1/2 cup sugar
2 tablespoons maple syrup
1 teaspoon maple extract
1 egg
1 teaspoon baking soda
2 1/2 cups flour
1 cup chocolate chips
1 cup toffee bits

Chocolate Covered Bacon - Step 1
Melt the 4 oz chocolate according to package instructions, and dip the cooked, cooled bacon strips one at a time until completely coated. Lay on a sheet of wax paper and refrigerate while you make the cookie dough.

Cookie Dough - Step 2
In a large mixing bowl, beat together the butter and sugars until fluffy. Add in the maple syrup, extract and the egg and mix again. Slowly add the flour and soda and mix just until combined. Stir in the chocolate chips, toffee, and chopped chocolate covered bacon.

Refrigerate at least one hour. Preheat oven to 350º, Scoop cookie dough onto cookie sheets 2" apart. Bake for 7-8 minutes. Let cool on wire racks and store in a covered container at room temperature.
