3 eggs
1/2 c. milk
1/4 tsp. salt
1 1/4 c. finely chopped pecans
1 tsp. ground cinnamon
8 slices whole-grain bread
nonstick cooking spray
maple syrup

Directions:
Directions:
Preheat oven to 200º and line a baking sheet with parchment paper. In a shallow dish, whisk together the eggs, milk, and salt. Place the chopped pecans in another shallow dish and mix in the cinnamon. Dip the bread, one piece at a time in the egg mixture, turning once allowing excess mixture to drip off. Transfer to dish with the pecans and gently press the nuts onto the bread with your hands. Repeat with all 8 slices. Coat a large griddle with cooking spray and place over medium heat. Cook the bread slices, in batches, about 2 minutes per side, or until browned. As you finish each batch, set the cooked pieces on the prepared baking sheet and place in oven to keep warm. Serve with drizzle of maple syrup.
