1 c. white sugar
1 c. light brown sugar
2 c. flour
3/4 c. Cocoa
1 1/2 ts. baking soda
2 ts. baking powder
1 ts. kosher salt
1 ts. instant coffee
2 eggs
1 c. milk
1/2 c. oil
2 ts. vanilla
i c. boiling hot coffee

Directions:

Heat oven to 350º. In a large bowl stir together sugars, flour, cocoa, baking powder, baking soda, salt and instant coffee until will blended. Add the eggs, then the milk, oil, and vanilla. Mix very well, about 3 minuets. Slowly add the boiling coffee. Cut parchment paper for the bottom of 2 or 3 9" cake pans. Divide the batter. It will be very thin, but it is fine. Bake 20 min for 3 pans and 25 min. for 2 pans. Test center to make sure they are done. Cool in pan for about 10 min and then turn out onto wire rack to cool completely before frosting.
