2C Flour
3/4 C Brown Sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
2 eggs
1/2 oil
1 C shredded carrot
1 C pineapple + juice

Directions:
Directions:
Combine the 7 dry ingredients, mixing well. Make a 'well' in the center of the dry ingredients. Beat the eggs until frothy and add the other wet ingredients. Stir to mix. Pour the wet into the dry. Mix to moisten. Don't over mix. Bake at 400º for 20 - 25
