1 graham cracker pie crust
1 egg yolk, slightly beaten
2 (21 oz.) cans cherry pie filling
3/4 C. flour
1/2 C. sugar
1/4 tsp. cinnamon
1/3 C. mayonnaise

Directions:
Directions:
Brush the bottom of pie crust with the beaten egg yolk. Place on a baking sheet; bake in a 400 degree oven for 3 minutes, or until lightly browned. Spoon pie filling into crust. In a bowl stir together flour, sugar and cinnamon. With a pastry blender, cut in the mayonnaise until mixture resembles coarse crumbs. Sprinkle over the pie filling. Place on a baking sheet. Bake at 400 degrees for 30 to 35 minutes or until crumbs are golden.

This pie is to die for, if you like cherry pie! It’s definitely Paul’s favorite. I usually make it every year for his birthday. If I make my own crust, I incorporate finely chopped almonds in the crumb mixture. I also use a 10-inch pie dish to accommodate the cherries without run over when baking.
