1 cup unsalted butter, room temperature
1/2 tsp. almond extract
1 1/2 cups granulated sugar
2 3/4 cups all purpose flour
1 egg
2 tsp. baking powder
1 1/2 tsp. vanilla extract
1 tsp. salt

Directions:
Directions:
Preheat oven to 400 degrees. In mixer bowl, cream butter with sugar until light and fluffy. Beat in egg and extracts. Mix flour, baking powder and salt; and to butter mixture 1 cup at a time, mixing after each addition. Knead dough into 2 balls. On a floured surface, roll each ball into a circle approximately 1/ inches in diameter and 1/8 inch thick. Dip cookie cutter into flour before each use. Bake cookies on un-greased cookie sheet 6-7 minutes or until cookies are lightly browned. Makes about 2 dozen cookies.
