24 oz. chocolate
8 oz. cream cheese, room temperature
3 tsp. Kahlua
12 oz. chocolate chips
1/3 of a paraffin bar

Directions:
Melt the chocolate in a double boiler, and mix with cream cheese and Kahlua. Beat until well combined and glossy. Chill until firm. Shape into 1-inch balls and place on wax paper-lined cookie sheet. Chill again for 1 to 2 hours. Can also be frozen for 20 to 30 minutes. Meanwhile melt chocolate chips and paraffin and dip frozen truffles, with the help of a toothpick, into chocolate mixture. Coating will harden instantly. Instead of dipping into chocolate, truffles also can be rolled into cocoa, ground nuts, or chocolate jimmies.
