Ingredients: 1-10 inch round tube pan, 4" deep, not greased! 1 c. sifted cake flour 1 1/2 c. sifted confectioners sugar 1 1/2 c. (12) egg whites 4 egg yolks, well beaten 1 1/2 tsp. cream of tartar 1/3 tsp. salt 1 c. granulated sugar 1 tsp. lemon extract 1 tsp. vanilla extract

Directions:Preheat oven to 375 degrees. Sift together cake flour and confectioners sugar 3 times in a medium bowl. In a large mixing bowl beat together the egg whites, cream of tartar, and salt until you reach soft foamy peaks. Gradually add granulated sugar 2 T. at a time, beat until meringue holds stiff peaks. Sift gradually the flour/sugar sifted mixture over the meringue and fold only until the sifted mixture disappears. Divide batter in half- in one half fold in egg yolks and lemon extract, in the other half fold in vanilla. Place egg yolk half of batter in bottom of prepared cake tube and top with vanilla half of batter. Cut trough batter 5 to 6 times around the pan to remove large air pockets. Bake at 375º for 30-35 minutes. Invert pan on cooling rack until completely cool. Using a long slender knife blade cut around outside edge of tube and remove outside of pan and then cut under the bottom to remove center and bottom. |
