2 lbs. boneless chicken breasts, cubed
2 cups oil
½ cup cashews
3 eggs
½ cup pea pods
¼ tsp. garlic powder
¼ cup honey
¾ cup flour
3 cloves garlic chopped
3 tbsp. cornstarch
¼ teaspoon pepper
¼ cup soy sauce

Directions:
Directions:
Prepare chicken. Make batter by combining eggs, garlic powder, flour, and cornstarch. Coat chicken with batter, and fry in oil until browned and puffy. (Batter may be thinned with milk if necessary.) Remove and drain chicken. Drain oil from pan, reserving 2 tbsp.. Add cashews and pea pods. Stir fry for 2 minutes. Return chicken to pan. Make sauce using remaining ingredients. Pour over chicken, and toss. Amount of sauce can be increased by adding additional honey and soy sauce. Serves 3 to 4

Note: Broccoli and/or water chestnuts can be added to the cashews and pea pods.
