1 Tbsp canola oil
1 medium white onion chopped fine
1 clove garlic chopped fine
3 lb butternut squash peeled and diced
1 sweet potato peeled and diced
2 medium potatoes peeled and diced
2 apples, peeled cored and diced
4 c chicken, turkey, or vegetable stock
1 Tbsp chopped fresh thyme or 1 tsp dried
1 Tbsp chopped fresh rosemary, or 1 tsp dried
1/4 tsp black pepper
3/4 c skim milk

Directions:
Directions:
Heat oil over medium heat in a large pot. Add onions and garlic and cook 2-3 minutes until soft. Add squash, sweet potato, potatoes and apples. Stir to combine. Add broth, thyme, rosemary, pepper. Bring to a boil. Reduce heat. Cover and simmer for 30 minutes or until squash is very tender.
Puree soup. Return to low heat for 5 minutes to warm soup. Stir in milk and serve warm.

To speed things up, I often precook the squash in the microwave and then chop up and add to the soup. I also will use homemade turkey broth which has its own unique flavour. I don't cook with salt but feel free to salt as needed. This is a real comfort food that 'hits the spot' on a cold winter 's day. Enjoy!
