10 oz pkg. frozen chopped broccoli
2 Tablespoons butter
2 Tablespoons flour
1/2 teaspoon salt
1/2 Cup milk
1/4 Cup Parmesan cheese
4 eggs, separated

Directions:
Directions:
Cook broccoli, drain well.
Add butter, cook stirring over high heat to evaporate water.
Blend in flour, salt and milk.
Cook till thickened, remove from heat, stir in Parmesan cheese.
Beat egg yolks, slowly add broccoli mixture to yolks.
Beat egg whites until stiff. Pour broccoli/egg yolk mixture over the egg whites, folding in.
Put into an ungreased 1 qt. souffle dish.
Bake at 350º
