4 lbs red-skinned potatoes
2/3 C packed golden brown sugar
5 tablespoons butter
1 tsp cinnamon
1/2 tsp salt
1/4 tsp ground nutmeg
pinch of ground ginger

2 C miniature marshmallows

Directions:
Directions:
Boil or bake sweet potatoes, to just firm tender. Peel and cut into chunks.

Preheat oven to 375 º F. Arrange potatoes in a 13 x 9 x 2 inch glass baking dish. Combine sugar, butter, cinnamon, salt, nutmeg, and ginger in heavy saucepan over Med. heat. Bring to a boil, stirring until sugar dissolves. Pour over potatoes; toss to coat.

Bake until syrup thickens slightly and potatoes are tender, about 20 minutes Increase oven temperature to 500 º F. Top potatoes with marshmallows. Return to oven; bake until marshmallows begin to melt and begin to brown, about 3 minutes.
