BRINE:
2 qts apple juice
1 lb brown sugar
1 C kosher salt
3 oranges quartered
4 oz fresh ginger thinly sliced
15 whole cloves
6 bay leaves
6 garlic cloves, crushed

1 turkey 12-14 lbs
vegetable oil

heavy gauge foil pan
5 gal clean bucket
hickory chips

Directions:
Directions:
In a large sauce pan bring the apple juice, brown sugar, and salt to a boil, stirring to dissolve everything. Allow to cool.

In a 5 gal bucket combine 3 qts water, oranges, ginger, cloves, bay leaves and garlic. Add apple juice mixture and stir.

Submerge turkey in brine and put something on top like tupperware that will push the turkey down when you snap the lid on. Remove the extra plastic from the lid if new and put it on. Refrigerate for 24 hours.

Set up your grill for smoking.

Remove the turkey from the brine and pat dry with paper towels Truss the turkey if you like and brush with oil. Grill indirect over medium heat with the foil pan under the bird between the coals. You could also cook the bird on a roasting rack in a pan all on the cooking grate. Add a handful of damp wood chips directly to the coals every 1/2 hour for about 2 hours. Foil the wing tips after about 40 minutes to prevent burning (you don;t have to, it just looks better). Brush again with oil at this time After about an hour or so foil the breast to prevent from getting too dark. Turkey is done when thighs are 180 º F and breasts is 165 º F. figure 12-14 minutes per pound.

According to Brent you can be lame and cook it in the oven, but the hickory smoke is awesome!
