Ingredients: 12 servings instant potatoes prepared according to the directions EXCEPT use all milk or cream where it suggests water on the box. Add everything it says, butter, salt, cream or milk - prepare it just as described, but do not bake them However you must microwave them to get them very warm so they will beat up creamy.
1 1/2 sticks butter or margarine
1 pt sour cream 1 (8 oz) cream cheese 2 dashes garlic powder (about 1/8 tsp) paprika

Directions:Take very warm, prepared potatoes (as described above) and add butter (leaving 1/2 stick to dot the top before baking) beat with electric mixer until well blended. Add sour cream and garlic and beat again (if you find the potatoes aren't combining well with each addition, warm potatoes slightly again - this will help) After all ingredients are mixed well and creamy, put in buttered baking dish.
These are to be creamy, but not runny like milk - to get the right consistency you may have to add another 1/4-1/2 C of the instant potatoes. Rewarm them again and beat them this will help them to thicken.
Use remaining butter (or extra if you forgot to save some) and sprinkle lightly with paprika and bake in an oven anywhere from 350 - 400 º F until crusty on top.
These can be made up a day in advance and put in the fridge. |
