3/4 cup vegetable oil
1 cup sugar
2 eggs
11/2 cups flour
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon vanilla extract
11/2 cups peeled, cored, shredded Ida red apples
1/2 cup chopped walnuts
Confectioner's sugar, optional, for sprinkling on top

Preheat oven to 350 degrees. Grease a 9-inch Bundt pan and set aside. In a large mixing bowl, beat the vegetable oil and sugar until well combined. Add eggs, one at a time, beating well after each addition. In a separate bowl, sift together the flour, cinnamon, salt and baking soda. Add the dry ingredients to the wet ingredients in batches, mixing only until combined. (Do not over mix.) Fold in vanilla, apples and walnuts, stirring just to combine. Transfer batter to prepared pan, smoothing top. Bake for 1 hour or until cake has risen and toothpick inserted in top comes out clean. Remove cake from oven and let cool to room temperature. If desired, dust top with confectioner's sugar before serving.
