4 tbsp. butter, softened
1 egg
1/2 c. applesauce
6 oz. plain low-fat yogurt
1 tsp. vanilla
1 1/2 c. flour
2 tbsp. sugar
2 t. baking powder
1/4 tsp. baking soda
3/4 dried cranberries
1/3 c. chopped walnuts

Directions:
Directions:
Preheat oven to 350º; grease muffing tins or line with paper liners.
Combine butter, egg, applesauce, yogurt and vanilla. Mix well.
Mix flour, sugar, baking powder, and baking soda in separate bowl. Add fruit and nuts.
Stir wet ingredients into dry ingredients.
Spoon into muffin tins. Makes about a dozen. Bake 20-30 minutes (depending on size of muffin). Remove from pans and cool on a wire rack.
