1 cut- up chicken
2 green peppers
4 or more garlic cloves
1 c. flour
1/4 c. olive oil
oregano
a couple of basil leaves
salt and pepper to taste
1 or 2 - 28 oz. cans of crushed tomatoes (Red Pack is good)
1 or 2 -15 oz. cans of tomato sauce

Coat chicken in flour shaking off excess. Brown chicken in olive oil in non-stick pan until lightly browned on medium flame. Set aside on paper towel to drain. Cut up peppers in strips and brown in pan oil until soft. Slice your garlic and lightly brown in olive oil. Pour the cans of tomato sauce and crushed tomatoes into a large sauce pan, add garlic, peppers, and the remaining ingredients to the sauce, add the browned chicken and simmer on a low flame for about an hour stirring now and then covered. Serve with your favorite pasta. Remember... you can add more or less ingredients according to your taste and how many people you are cooking for. Sprinkle grated cheese on top if you like. Enjoy!

I like to leave the lid of the sauce pan slightly open so the sauce doesn't get too watery and if you like your sauce a little chunky you can add one 15 oz. can of diced tomatoes. I use my own judge when adding ingredients. I never measure. Lol! -Patricia Auletta Porter

This also is Patricia's mom's recipe. She used Red Pack tomato products also. Today, I use sale tomatoes with the least added ingredients on the label. San Marzano canned tomatoes from Italy's volcanic soil, is very desirable amongst today's home cooks and Chefs. Give them a try in this recipe. - MIMI
