1 can garbanzo beans
1 can white kidney beans
1 can red kidney beans
1 can black beans
1 can sweet corn
3/4 c. chopped scallions
1/4 c. apple cider vinegar
2 medium tomatoes, chopped
1/4 c. olive oil
2-3 T chopped cilantro

Directions:

Mix olive oil and vinegar. Drain and mix beans. (Wash off garbanzos.) Mix in scallions, tomato and cilantro. Pour liquid over beans and mix.

I have eaten this at Josh and Susan's numerous times. Their children, Angelica and Arthur love it, too! I would substitute chopped parsley for cilantro. My family are not fans of cilantro.
