5 dry Thai Chilis
3 roma tomatoes
1/2 white onion
3 tbsp sugar
1/3 cup fish sauce
1/4 cup lime juice or white vinegar
5 cloves of garlic

Directions:
Directions:
1. Coarsely chop onions, tomato, and garlic set to the side.
2. In a sauce pan dry fry the 5 Thai chilis (i used fresh and it worked well) don't burn the chilis, just brown them and remove from heat and set aside.
3. Turn heat up on stove and dry fry the tomatoes, onions, and garlic. Browning them but not burning them. This should give them a roasted flavor.
4. In a food processor add fish sauce, lime juice, and sugar. stir it together with food processor.
5. Add tomatoes, onions, and garlic to food processor (that should still have fish sauce, lime juice and sugar in it)
6. Break chilis into pieces and add to food processor
7. Using the pulse button on the processor blend ingredients. You should still see pepper seeds floating around.

This is great for steak, over chicken, or as a dip like salsa. outstanding. The key is browning the tomato, onion, and garlic mixture. If this isn't done right it won't taste the same.
