6 large Loin pork chopes, 1" thick or so
1 tsp salt
1/2 cup onion, chopped
1 20 oz can pineapple slices
1/2 cup ketchup
1 Tbsp vinegar
1/4 tsp oregano
1 Tbsp cornstarch
1 Tbsp cold water

Trim excess fat from pork chops; sprinkle with salt. Brown slowly over moderate heat. Remove chops from skillet. Add onion and cook until tender and lightly browned. Drain pineapple slices, reserve liquid. Mix together drained pineapple juice, ketchup, vinegar and oregano.

Return chops to skillet. Pour mixture over chops. Bring to a boil, cover, reduce heat. Cook gently for 1 hour or until chops are tender. Mix cornstarch with cold water, stir into liquid in pan. Arrange pineapple slices over top of chops and cook for 5 min longer, until pineapple is heated through and sauce has thickened.

Quick oven method: Put chops and onion unbrowned directly into a casserole. Mix all sauce ingredients. Pour over chops and bake for 1 to 1 1/4 hours. Place pineapple slices on chops for last 5-10 min.
