2 baked 9-inch round white cake layers, cooled
2 cups boiling water
1 pkg. (4-serving size) Jell-O Brand lemon flavor gelatin
1 pkg. (4-serving size) Jell-O Brand lime flavor gelatin
1 tub (8-12 oz.) Cool Whip whipped topping, thawed

After cake has cooled, pierce layers with a large fork at 1/2-inch intervals. Stir 1 cup boiling water into each flavor gelatin in separate bowls at least 2 minutes until dissolved. Carefully pour lemon gelatin over one cake layer and lime gelatin over the second cake layer. Refrigerate 3 hours. Dip one cake pan in warm water10 seconds, unmold onto serving plate. Spread with about 1 cup of the Cool Whip. Unmold the second layer; carefully place on first cake layer. Frost with the remaining whipped topping. Refrigerate 1 hour or until ready to serve. Store leftover cake in refrigerator.

For a festive poke cake, use a red gelatin and green gelatin for Christmas. It's a beautiful festive cake for the holiday.
