12 large ripe tomatoes, cut into eighths
2 Bermuda onions sliced
1/2 C chopped parsley or 1/4 C dried parsley

DRESSING:
3 cloves garlic, pressed
3 T red wine vinegar
1 1/2 tsp salt
freshly ground pepper to taste
9 T olive oil

Directions:
Directions:
Slice tomatoes into eight wedges. Slice onions, sprinkle with parsley and toss

DRESSING: Combine and stir first 4 ingredients until salt is dissolved. Add olive oil and mix. Pour over tomatoes and toss. Let stand at room temperature at least 15 minutes before serving.
