2/3 cup soft margarine
3/4 cup sugar
2 eggs
2 cups mashed bananas
1 tbsp lemon juice
2 cups flour
1 tsp baking soda
1/4 cup bran flakes (optional)
3/4 cup mini chocolate chips

preheat oven to 350º

1. Mash ripe bananas. If bananas are not very ripe, mash and let sit for a few hours
2. Cream margarine in a large bowl
3. Add sugar to creamed margarine and beat well
4. Add eggs to creamed mixture. Beat well
5. Measure flour. Mix baking soda into flour; Add bran flakes if desired.
6. Mix 1/4 of the dry ingredients into the egg/sugar/margarine mixture. Mix thoroughly; repeat process until all dry ingredients are incorporated into the batter.
7. Stir lemon juice to mashed bananas.
8. Mix bananas mixture into batter.
9. Fold chocolate chips into batter ensuring chocolate chips are distributed throughout the batter. Sometimes the batter at the bottom of the bowl contains very few chocolate chips.
10. cooking options:
- turn into loaf pans cook at 350 for an hour
- drop by teaspoons into mini-muffin tins and cook for 11-13 minutes. If some people don't want chocolate chips while others want chocolate, can cook a few muffins before adding chocolate chips.
- drop until regular muffin tin about 2/3 full; cook until toothpick stuck in the thickest part of the muffin comes out without crumbs.
