Cake Ingredients:

2 Cups of flour
6 Eggs (seperated)
2 Cups Sugar
1/2 Cup milk
1 tsp vanilla
2 tsp baking powder


Milk Mixture

1 can evaporated milk
1 can of sweetened condensed milk
1 cup of half and half
1 egg yolk only

Topping

1 egg white only
1 cup sugar
1/4 cup water
2 drops lemon juice
Maraschino (drained)

CAKE
Pre-Heat oven to 350 degrees. Beat 6 egg whites till stiff...put yolks aside for later. Add sugar, vanilla, yolks and baking powder. add flour a little at a time. add milk. Mix well. Pour into a greased 9x12 baking pan. Bake for approx 40 min. until golden, check with toothpick. let cool completely. Remove cake from pan carefully, remove crust on all four sides. Try not to remove to much cake. put cake in a deep serving pan. Set aside.

Milk Mixture
Mix all ingredients together with a whisk or hand mixer or blender. Pour mixture over cake. Let mixture soak into cake.

Topping
In a small saucepan, combine sugar and water over medium flame. Keep stirring sugar mixture until bubbly.
Keep stirring until sugar thickens, DO NOT let sugar brown. Let cool slightly. In the meantime beat egg white until thick. and add the lemon juice. (Good idea to have the egg white beaten already but not to early) Now add the sugar to the egg white while beating with a hand mixer. The mixture should be light and fluffy and not watery.
Cut the cherries in half and put one for each serving you want on top.

The topping is very difficult, to get just right. So have plenty of extra ingredients if you are determined to make this topping....If all else fails use cool whip. It's just as good.
