1 Tbsp. active dry yeast
2 C. warm water (105 to 115)
1 Tbsp. sugar
1 1/4 tsp. salt
5 1/4 to 5 3/4 C. flour
Olive oil
Yellow cornmeal
Coarse salt (optional)

In a large bowl, dissolve yeast in warm water. Stir in sugar and salt. Using a wooden spoon, stir in as much flour as you can. Turn out onto a lightly floured surface. Knead in enough of the remaining flour to make moderately stiff dough that is smooth and elastic (6 to 8 minutes total). Lightly coat a large bowl with olive oil. Shape dough into a ball. Place dough in oiled bowl; turn dough once to grease surface. Cover with a clean cloth. Let rise in a warm place until doubled in size (45 to 60 minutes). Punch down dough. Turn onto a lightly floured surface. Cover; let rest for 10 minutes. Grease a large baking sheet or two smaller baking sheets; sprinkle heavily with cornmeal. Shape dough into 14 equal balls. Place balls on prepared baking sheet. Let rest for 5 minutes. Place an empty baking pan on the bottom rack of an unheated oven. Pour boiling water into the pan to a depth of 1 inch. Preheat oven to 400 degrees. Slash each dough ball on top in two or three places with a sharp knife. Brush with water. If desired, sprinkle with coarse salt. Place baking sheet on the second rack of the oven. Bake for 25 to 30 minutes or until rolls are crusty and golden. Immediately transfer rolls to a wire rack; cool slightly. Serve warm. Makes 14 rolls.
