1/2 cup unsalted, sweet butter
1 cup sugar
2 large eggs
2 cups all purpose flour
1 teaspoon baking soda
1 (8 ounce) container plain yogurt
1/4 cup chopped pecans (optional)
1 teaspoon grated orange rind
Topping:
1 tablespoon sugar
1/2 cup orange juice

Directions:
Directions:
Preheat oven to 375 degrees. Beat butter at medium speed until creamy; gradually add the sugar, beating well. Add eggs, one at a time beating until blended. Combine flour and baking soda, add to butter mixture alternating with yogurt, beginning and ending with flour mixture. Beat at low speed until blended after each addition. Stir in pecans and orange rind. Fill greased muffin pans or paper baking cups about 3/4 full. Mix 1 tablespoon of sugar with the orange juice. Spoon on top of each muffin. Bake 18 to 20 minutes. Makes 12.
