5 eggs
2 C. confectioners' sugar
2 1/4 C. all purpose flour
3/4 C. finely chopped walnuts
2/3 C. raisins
4 ozs. candied orange peel, finely chopped
2 tsp. baking powder
1/2 tsp. salt
1 C. butter or margarine, room temperature
1 Tbsp. grated lemon peel
1 tsp. vanilla
3 Tbsp. vodka or brandy

Beat eggs with sugar 5 minutes at high speed of electric mixer. Mix nuts, raisins, and orange peel with 2 Tbsp. flour. Mix remaining flour with baking powder and salt. Cream butter, lemon peel and vanilla until fluffy. Beat in vodka. Add egg mixture gradually, beating constantly. Add flour mixture and beat 5 minutes. Fold in fruit-nut mixture into the batter. Turn into a well greased and floured loaf pan. Bake at 350º for 1 hour. Cool bread in pan on wire rack 10 minutes. Turn our onto a wire rack; cool completely. Wrap in plastic wrap. Store 1 to 2 days to mellow. Sprinkle with confectioners' sugar, if desired, or ice with Lemon Icing. Makes 1 loaf.
