1 - 7 oz. can tuna
2 Tbsp butter
4 Tbsp four
1/2 C milk
2 Tbsp parsley or chopped celery
1 Tbsp. lemon juice
1 slightly beaten egg
1-1/2 c soft white bread crumbs or cracker crumbs
salt & pepper
For breading:
1 slightly beaten egg
cracker crumbs


Directions:
Directions:
Separate tuna into flakes. Melt butter, add flour and blend. Add milk and cook until very thick. Stir constantly. remove from heat. Add tuna and remaining ingredients. Mix well. Form into cutlets. Refrigerate 2 hours. Dip into egg and cracker crumbs. Fry in hot oil or butter until brown.
