1&1/2 c. chocolate cookie crumbs
3 tbsp. butter, melted
1 tsp instant espresso powder

12 oz. chocolate
3 pkg cream cheese
3/4 granulated sugar
3 eggs
1 c. whipping cream
1 tsp. almond extract

9& 1/2 inch springform pan
Center pan on large square foil, press foil to side of pan
In small bowl, stir together cookie crumbs, butter and coffee granules until moistened. Press into bottom and 1/2 inch up side of prepared pan. Bake in centre of 325 ºoven until firm about 10 minutes. Let cool.
Filling; melt chocolate, then cool to room temperature.
In a large bowl, beat cream cheese until smooth; beat in sugar. Beat in eggs, 1 at a time, beating well after each. Beat in cream, liqueur and chocolate until blended. Pour over crust and smooth top.

Secret to success: Set the springform pan in larger pan; pour in enough hot water to come 1 inch up side of pan. Bake in center of 325º oven until set around edge but centre is still jiggly, about 1 hour. Turn off oven; let stand in oven for 1 hour.

Transfer springform pan to rack and remove foil; let cool completely. Cover with plasic wrap and refrigerate until chilled.
