2 cups couscous, uncooked
2 T. olive oil
1 1/2 lbs. stew meat, cubed
1 onion, chopped
2 large potatoes, cubed
4 carrots, sliced
1 14 oz can of chick peas, rinsed
4 T. tomato paste
1 T. harissa, or hot chili paste
1/2 T. paprika
1/2 T. cinnamon
1/2 T. cumin
1 T. salt

Directions:
Directions:
In a frying pan, saute the onions in the olive oil over medium heat. Place the onions in a crock pot. Brown the meat and then also add it to the crock pot.

Add all the remaining ingredients except the dry couscous to the crock pot. Add 1 cup of water to the pot. Stir. Cook for 1 hour on high until the liquid is boiling. Reduce the heat to low and cook an additional 4 hours stirring occasionally.

Prepare the couscous following the directions on the package. Taste the couscous sauce and adjust the salt and hot spice level to taste.

Edith Ahlers uses 1 pint of Mexican Hot Sauce (canning & preserving section) and 1 pint of plain tomato sauce instead of the recipe's last 6 ingredients.
