Delicious Turkey Soup Recipe

1.5 LB ground turkey
Splash of olive oil
1 medium onion finely chopped
3 red bell peppers
1 head of garlic
4 stalks of celery finely chopped
1 can diced tomatoes (14 oz)
Chicken broth (32 oz)
1 tsp garlic powder
1 tsp onion powder
1 T dried parsley
Salt and pepper to your taste
2 heaping cups of chopped fresh spinach or kale
Green vegetables of your choice (I like to add chopped green beans or asparagus.)
You could add rice, beans, potatoes, corn or just about anything. (I try to avoid the carbs)

Brown the ground turkey in a splash of olive oil.
Add chopped onion midway through browning.
While turkey is cooking, remove stems and seeds from red peppers, chop red peppers into large chunks, rub with olive oil and roast with the head of garlic (top cut off and olive oil drizzled over it) toss on a cookie sheet and roast in 350 oven just till peppers are soft and beginning to get brown spots.
While peppers and garlic roast, add all the other ingredients to the ground turkey and mix.
Bring soup up to a boil and once it begins to boil turn down to a simmer.
When peppers and garlic are roasted squeeze the garlic out of the head onto the cookie sheet and then scrape peppers and garlic into blender or food processor and puree.
Add puree to the soup and mix.
Simmer for about hour and you will have delicious turkey soup which is also very healthy.

Sometimes after browning the turkey I toss everything in a crock-pot and cook on low for about 3 hours.

This soup freezes well and I enjoy grabbing a 2 cup serving from the freezer and taking it to work for lunch. By noon is has thawed enough that a few minutes in the microwave heats it right up.
