1/2 cup sour cream
2 tsp. Dijon mustard
1 tbl. mayonnaise
2 tsp. chives, snipped with scissors
1 tsp. fresh lemon juice
Zest of 1 lemon
1/2 tsp. kosher salt
Generous pinch of cayenne pepper
Freshly ground black pepper

Mix together all ingredients listed. Refrigerate at least 1 hour to allow flavors to blend.

Serve this sauce over savory crepes just before serving; garnish with extra chives, or substitute another favorite herb. It's also great over blanched asparagus (try substituting tarragon for the chives in the sauce). I find it also makes a good dip for plantain chips.
