Cream of Spinach Soup Recipe

2 c chopped fresh spinach - packed
1 c onion chopped
1/4 c butter
3 medium potatoes, peeled and quartered
1-1/2 c chicken broth
1-1/2 c water
2 chicken bouillon cubes
2 c half-and-half
1/2 - 1 tsp. salt to taste
1/8 tsp. pepper
3/4 c sour cream

In a large saucepan over medium heat, saute onion in butter for 3 min. or until limp. Add potatoes, chicken tock, water, and bouillon cubes. Bring to a boil. Reduce heat to low, cover and simmer for 20 min. or until the potatoes are tender. Add chopped spinach and cook for 3 to 4 min. longer until spinach is tender.
Working in batches, puree soup mixture in a blender and return to a saucepan. ( Only fill 1/4 of the blender at a time, and be careful to cover blender lid with a towel. To avoid the steam from popping the top off, start with a slow speed and increase being careful not to pulse the blender.)
Whisk in half-and-half, salt and pepper.
Over low heat, bring the mixture to the point where it is just simmering. Whisk in the sour cream. You may want to use an immersion blender to get the sour cream fully incorporated. (A hand whisk with some efforts works just as well)

This soup can be served hot or chilled. Garnish with chopped chives, sprinkles of allspice, or a dollop of sour cream.
