5-8 red & yellow peppers (Use small sweet peppers if you want to stuff)
16 oz. cream cheese
4-6 oz. cheddar cheese
1/2 c red onion finely chopped
1/4 c toasted pecans chopped
4-6 oz. Rothchild - roasted pineapple habanero dip

Directions:
Directions:
Toast pecans in oven a few minutes. Clean and cut up peppers into 1-1/2 - 2" pieces. For small sweet peppers cut in half.
combine ingredients together in mixing bowl. Add a pinch of salt to taste. Stuff small peppers or leave in bowl and surround with cut peppers. Dip can be made ahead of time and stored in frig.
