1 1/4 cup flour
1 teaspoon salt
8oz unsalted butter
4oz unsweetened chocolate, coarsely chopped
2oz bittersweet chocolate, coarsely chopped
2 cups sugar
1 teaspoon vanilla extract
4 eggs (room temperature)

Directions:
1. Put a rack in the center of the oven and preheat to 350 degrees.
2. Sift together flour and salt; set aside.
3. Melt butter and chocolate together on low heat in a medium saucepan. Go for a low heat and stir frequently so you don't burn the
chocolate (5-7 minutes).
4. Add one cup of the sugar to the chocolate mixture and stir over heat for 30 seconds.
Remove from heat and stir in the vanilla.
5. Mix the remaining one cup of sugar and all four eggs in a bowl until just combined.
6. Little by little, pour HALF of the sugar-egg mixture into the chocolate mixture, stirring
gently with a rubber spatula so the eggs don't set from the heat. Pour the
chocolate mixture into a large bowl.
7. Whip the remaining half of the sugar-egg mixture on high until they are pale, thick and
doubled in volume, about 3 minutes.
8. Using a rubber spatula, gently fold the whipped eggs into the chocolate mixture. When the
eggs are almost completely incorporated, gently fold in the dry ingredients.
9. Pour batter into an ungreased 9-inch square baking pan and bake brownies for 40-45 minutes.
10. Remove from oven and cool in the pan on a rack before cutting.
