4 Pounds of White Potatoes, cooked, peeled, and cubed.
4 Gloves of Garlic, Finely Chopped
1 1/2 Cups of Chopped Red Bell Pepper
1 1/2 Cups of Chopped White Onion
1 Cup of Chopped Celery
1 1/2 Cups of Mayonnaise
1/2 Cup of Mustard
5 Hard Boiled Eggs Chopped
Salt /Pepper to Taste
1/4-1/2 Cup of Crumbled Bacon

Directions:
Directions:
In large pot boil potatoes in salted water until soft, approximately 20 minutes. Drain and transfer to large bowl. Mash potatoes and add garlic, bell pepper, onion, and celery. Stir and let stand for about 5 minutes. Whip in the mayonnaise, mustard, salt, and pepper. Add eggs and mix well. Smooth the top and add the bacon bits.
