3/4 cup packed dark brown sugar
1/4 cup white sugar
1/2 cup salted butter, melted and hot
1 large egg
2 tsp. pure vanilla extract
3/4 cup all-purpose flour, sifted
Pinch of salt

Directions:
Directions:
Preheat oven to 350º. Mix both sugars in a medium bowl; melt the butter in microwave and immediately pour over the sugars; stir to combine.
Mix egg and vanilla together and add to sugar-butter mixture. Add flour and stir to incorporate.
Spoon batter into mini cupcake pans that have been lined with mini cupcake papers or sprayed with Pam.
Bake at 350 for 12 - 14 minutes, turning pan halfway through baking time.
Cool, then sprinkle with powdered sugar.
For beautiful little tea cakes, try baking them in mini (3") brioche pans; just allow a slightly longer cooking time.

Years ago, when I was chairing the Junior League Showhouse Tearoom, we added a little marketplace filled with edibles and cookbooks from all over the South. Tennessee Tea Cakes were a beloved treat from a local entrepreneur and they flew off our shelves. Unfortunately, the proprietress, Frances Bradley, passed away and with her went the recipe for these delightful nibbles. But after an online search and some testing, I think these come fairly close.
