2 C quick-cook oats, uncooked
1/2 C dried currants
1/2 C dried cranberries
1 C all-natural peanut butter (I used Adam's crunchy)
1/4 C raw almonds, chopped or slivered (I also add 1/4 pine nuts if I have them)
1/3 C honey
2 tsp vanilla

Directions:
Directions:
First mix the oats and almonds.
Spread onto a large pan and place under the broiler for a few minutes to lightly toast.
Mix all the ingredients together in a bowl.
Spread the mixture into an 11"x7" pan and refrigerate for 2 hours, no baking required. (You can use a larger pan if that's all you have.)
Cut them any way you like and enjoy.
I return the uneaten bars to the fridge for storage, but it's up to you.

Call them energy bars, breakfast bars, or whatever you like. I have made these bars for young kids and adult friends. Everyone loves them. They are perfect as a healthy snack or a breakfast on the go.
You can customize this recipe really easily. You don't need to toast the oats if you choose, or you can try different dried fruit or nuts. I usually add additional fruit and nuts if I have them, just add a little more peanut butter and/or honey for moisture.
Kids will love these even if they don't normally like dried fruit. Just cut the fruit and nuts into smaller pieces.
