Large zucchini
1 can Rotel tomatoes
Italian seasoning
Olive oil
Butter

Directions:
Directions:
Use a peeler to cut ribbons of zucchini. Saute in butter and olive oil until soft. Add Italian seasoning and rotel tomatoes and heat through. Sprinkle Parmesan cheese on top when serving.

Can also be a main "pasta" dish if going low carb, or use it as a side dish. Excuse the messy stove in the picture :)
