1 whole medium onion,chopped
8 oz by weight chopped mushrooms
1/4 cups chopped black olives
2 - 3 cloves minced garlic
3 tablespoons butter
8 oz by weight whole wheat Pasta (spaghetti or your choice)
3 cups cooked diced chicken
1 can cream of mushroom soup (10.75 oz)
1 can cream of chicken soup (10.75 oz)
1 can of Ro-Tel (10oz)
1/2 cup shredded cheese (ok, I used more than that!)
salt and pepper to taste

Directions:

Preheat over to 350º
In a skillet, saute onions, mushrooms, olives and garlic til tender.
Cook pasta according to directions. After pasta is done, add the sauteed onions, mushrooms, olives and garlic, chicken, soups, and tomatoes (the Ro-Tel) Add salt and pepper. Mix well and place in a large casserole dish. Bake for 35 minutes, and in the last 5 minutes, top with shredded cheese.
