1 lb. whole wheat pasta
2 shallots, finely minced
2 cloves garlic, minced
2 T. olive oil
4 T. butter
3/4 C chicken broth
2 (10 oz.) bags of baby spinach
1 pkg. (8 oz.) baby portabella mushrooms
2 T. balsamic "Glaze"
1/2 c. romano cheese
salt and pepper to taste

Prepare pasta according to al dente package directions. Over medium heat in a large skillet, heat oil and melt butter. Add shallots and garlic, saute 2-3 minutes. Add the spinach, saute 2-3 minutes. Increase to high heat and gradually add chicken broth, cook for an additional 2-3 minutes. Stir in Balsamic glaze, add mushrooms, continue cooking for 2-3 minutes. Add drained pasta and gently pan toss to coat. Sprinkle with grated cheese and salt and pepper.
