2 1/2 c water
1 c dried lentils
2 bay leaves
1 tsp olive oil
2/3 c carrot grated
4 oz shredded smoked cheddar
1/2 c dry bread crumbs
2 tsp fresh thyme
1 1/4 tsp salt
3/4 tsp garlic powder
1 tsp onion powder
3/4 tsp paprika
1/2 tsp black pepper
3 egg whites

Directions:
Directions:
1. Place first three ingredients in a sauce pan; bring to a boil. Cover, reduce heat to medium-low and simmer 30 minutes or lentil tender. Drain, discard bay leaves and partly mash lentils w/potato masher.
2. Heat oil in medium skillet. Saute carrots five minutes or until tender.
3. mix carrot, cheese and the remaining ingredients with the lentils. Cover and chill 45 min - overnight.
4. Divide mixture to 6 equal portions shaping into a 1/2 inch thick patty.
5. Heat frying pan coated with cooking spray to medium high heat. Cook patties 5 minutes on each side.

These freeze very well, also turn only once, they hold together OK but are a little fragile.
