Cinnamon Rolls Recipe

2 Tablespoons yeast
1 Tablespoon sugar
1 teaspoon salt
1 cup warm water
1 cup warm milk
a little under 1 Tablespoon of cinnamon
6 Tablespoons of butter
1/2 cup sugar
3 eggs
7 cups flour

Filling (make 4 of the following combination):
2 Tablespoons butter
1/2 cup sucanat (or brown sugar)
1 Tablespoon cinnamon
1/2 cup raisins or nuts is optional

Icing:
1 stick butter
1 to 1 1/2 cups powdered sugar
1/4 teaspoon vanilla extract (or almond extract)
1 to 1 1/2 Tablespoon milk

Directions:
Directions:
Dissolve yeast, 1 T. sugar, and salt in the warm water and wait a few minutes. Add remaining ingredients, four last. Knead into a smooth dough. Let dough rise in a greased bowl until doubled (about an hour).
Divide dough into 4 sections. For each section, roll dough flat (about 1/4 to 1/2 inch thick), spread one of the filling mixtures into it, then roll the dough jelly-roll fashion and cut into 1/2 inch slices. Place rolls into greased 9x13 pans. Allow rolls to rise until double (about 1 hour).
Bake at 350 degrees until golden brown (about 20 minutes).
Frost with icing as desired.
To make the icing: Melt a stick of butter, add powdered sugar and vanilla extract (or almond extract). Stir. Add enough milk to the mixture to make it the consistency you like.
