Ingredients:  
1 T butter
2-3 shallots, minced
1 c uncooked rice (use any variety)
3/4 c coconut milk
1 c water
1 pinch nutmeg
1 (15 oz) can of black beans, rinsed & drained
1/2 tsp salt

Directions:
Directions:
1. Melt butter, stir in shallot & cook until softened, (about 3 min)
2. Add the rice & stir
3. Pour in the coconut milk & water; season with nutmeg
4. Bring to a boil over high heat, then reduce to medium-low, cover & simmer until liquid is absorbed & rice is tender, (about 18 min)
5. Stir in black beans & cook a few minutes until hot.
