1 box chicken broth (or 4 cups broth)
1 bunch of kale - rinsed, de-stemmed, and torn
1 lb. sausage (sweet Italian or plain ground pork sausage) - removed from casings and browned
1 large can of diced tomatoes (do not drain)
1 can great northern or navy beans (do not drain)

Brown sausage and drain. While browning sausage, prepare kale. Then just throw everything in a pot together and simmer for an hour to soften the kale. Serve with your favorite corn bread!

This recipe is easy! To multiply, just add another can of tomatoes and beans, a cup or two of broth, or pound of sausage! It's also easy to make this recipe milk, wheat, and soy-free. Just check the sausage ingredients. I like the plain sausage sold as ground pork (make sure it is salted like sausage not the unsalty kind of ground pork...it should look like sausage). Homemade broth is great! Enjoy!
