½ cup Strawberry Preserves
⅓ cup grape seed oil
¼ cup International Collection Champagne Wine Strawberry Vinegar
Salt and Pepper to taste
6 oz baby spinach
1 pound strawberries, hulled & sliced
1 large shallot, thinly sliced
8 oz Cinnamon Jack cheese, sliced ½ inch think, cubed
½ cup shelled pistachios

Directions:
Directions:
Whisk together preserves, oil and vinegar. Season with salt and pepper. Set aside. Divide spinach onto 4 serving plates. Arrange strawberries, shallots and cheese over spinach. Drizzle Strawberry Vinaigrette over salad and sprinkle with pistachios.

Makes 4 servings.

Makes enough vinaigrette for many salads. You can make salad ingredients in one bowl, then add dressing and pistachios just before serving. Pistachios get soggy in fridge.

I got this recipe at Byerly’s I have looked for the cheese elsewhere and didn't find it. Same with the Champagne Wine & Strawberry Vinegar. (Misty’s note: We have used Monterey Jack cheese and added some cinnamon to substitute for the cheese in the recipe. And we have found the Wine/Vinegar in other stores.)
